Green Curry Meal

DariKay's homemade curry paste is tempered with coconut cream to submerge an assortment of freshly hand-cut vegetables including zucchini, sweet potato, eggplant and green beans. Rounded off with a judicious squeeze of fresh lime juice and a pinch of coconut sugar, the result is exploding with flavour but doesn't pack too much heat.

Inspiration

The green curry meal requires no accompaniment, but you can also adapt it into the recipe of your choice. Try bumping it up with diced chicken or take the vegie route and add silky tofu. In the mood for seafood? This curry also works beautifully when you lob in some prawns or pieces of fish. After bunging in your optional extras, simmer in the homemade curry until cooked before serving with rice. Home cooking doesn’t get any easier than this.
