Combining the juicy sweetness of the corn with tender chicken breast and coconut milk, this bowl of yum will set your hunger free. Try adding roasted corn kernels or harissa for extra crunch and zing – or unleash it over rice and revel in the results.

Ingredients
Chicken broth (71%) (water, free range chicken bones), corn (13%), free range chicken breast (8%), onion, coconut milk, corn starch, chicken stock, salt, turmeric, pepper.

Serving Suggestion
Combine 2 tbsp finely grated parmesan, 1 egg, 2 tbsp milk, 1 clove garlic (crushed), 1/3 cup plain flour, 1 tsp baking powder and salt. Mix well. Spread over 4 slices white bread. Cut off crusts, cut each slice into 4 triangles and dip in sesame seeds. Deep fry 2 mins until golden and crispy. Serve with soup.

Inspirations

  • For some crunch, top with roasted seasoned corn kernels.
  • Garnish with a generous amount of sliced spring onions and fresh coriander.
